Crafted in the Montes de Toledo region of central Spain, this cheese reflects generations of traditional goat’s milk cheesemaking. Compared to many other young goats cheese, this variety offers a more balanced and layered profile. Each wheel arrives young from Spain, then spends several months maturing in the factories aging room. During this time the workers turn and check the cheese by hand each week to ensure even aging.
This semi firm goats cheese aroma starts with a mild saltiness and touch of spice, then finishing with creamy, buttery, and nutty notes. The absence of the typical goat’s milk tang makes it especially approachable, even for those new to goat cheeses.
Cheesemakers use only four ingredients: fresh goat’s milk, salt, rennet, and traditional techniques. Pair with fresh honeycomb, dried herbs or fresh fruits. Serve at room temperature.
