Crafted under Martin Spedding’s guidance, 10X Pinot Noir from the Mornington Peninsula enjoyed warm days and cool, dry nights, ideal for vibrant acidity and balanced, intense flavours. Handpicked between 25 February and 14 March, the fruit was hand sorted, cold soaked for four days, and fermented in concrete, oak, and stainless steel with gentle extraction. After natural malolactic fermentation, it aged five months in 10% new French oak barriques and puncheons.
Ruby red in colour the 10X Pinot Noir shows earthy, spicy aromas with a sweet perfume. The palate opens with raspberry and leather, flowing to black cherry and fine, resolved tannins. Layers of spice and earth add complexity, while lively fruit drives a long, graceful finish.
Dry (13.5% ABV). Serve at 15–18 °C with crumbed lamb cutlets and a fresh broad bean, celery, radish, and mint salad. Enjoy now or cellar to 2035.
