During the Dutch Summer, cows roam freely in regular rainfall and mild temperatures. This results in rich, high-quality milk that forms the foundation of this deeply flavourful cheese.
This semi-firm Netherlands Reypanaer matures for twelve months in a historic 100-year-old aging room. The natural maturing process benefits from the room’s mild temperatures and high humidity. These conditions let the cheese age slowly and evenly. Over time, this environment creates a firm and creamy texture. It also develops a complex flavour with notes of caramel, toasted nuts, and a mild sharpness.
Reypenaer pairs beautifully with fig jam, walnuts, crusty bread, or thinly sliced cured meats. Serve at room temperature to enjoy its full flavour and aroma.
