This French goats cheese is one of France’s most popular goats cheeses as the cheesemakers lightly dust the rind with salt and a wood ash, creating a heavy contrast against the white interior.
As the cheese matures, the center stays chalky while the edges soften beneath the increasingly wrinkled rind. This transformation over time enhances both texture and complexity. When young, the French Chevre goats cheese delivers bright lemon and gentle nutty notes, however as it matures it develops a more herbaceous, floral quality with deeper aromas and increased intensity.
Serve it with fresh pears, toasted walnuts, or wildflower honey. Add it to a cheeseboard for a visual and textural contrast, or enjoy it with warm baguette. Serve at room temperature.
