Only the finest milk is used in Reypenaer’s production. During the Dutch summer, cows roam freely through lush pastures nourished by regular rainfall and mild temperatures. This seasonal freedom results in rich, high-quality milk that forms the foundation of this well-balanced, deeply flavorful cheese.
This semi firm Netherlands Reypanaer matures for twelve months in a historic 100-year-old aging room. The natural maturing process benefits from the room’s mild temperatures and high humidity. These conditions let the cheese age slowly and evenly. Over time, this environment creates a firm yet creamy texture. It also develops a complex flavor with notes of caramel, toasted nuts, and a mild sharpness.
